
We have to wait a little longer until it really is spring, but are you already hungry for a lighter meal? Then make this spring stew with turnip greens. Absolutely delicious with dried tomatoes and spring onions!

Ingredients:
- 800 grams of potatoes
- 600 grams turnip greens
- 50 ml (semi-skimmed) milk
- 2 tablespoons butter
Prepare
- Peel for the potatoes. Cut the potatoes into pieces and bring them to the boil with little water. Boil the potatoes for about 20 minutes.
- Wash the turnip greens well and let them drain. Cut the turnip greens (leaf and stems) into 1 cm wide pieces. Drain the potatoes, steam the potatoes dry for a while and mash the whole with a potato masher.
- Heat the milk and stir it together with the butter through the potatoes until a fairly dry puree is formed.
- Now, while you continue to heat the puree, fold the turnip greens in parts through the potatoes. Stir well but do not heat too long, the turnip greens should still remain a bit crunchy. Season to taste with salt and pepper and serve immediately.
Tips
- Nice to add garlic, strips of dried tomato (from a jar) and spring onions into rings.
- Serve, for example, with slices of smoked chicken breast.
