Lunch dish for 4 persons

Ingredients:
- 400 grams of potatoes
- 1 onion
- 2 tablespoons vinegar
- 1 teaspoon honey
- 125 grams of silver onions
- 125 grams sweet and sour pickle
- 200 grams peas (frozen)
- 150 grams of cooked meat (leftover chicken breast, roulade, fricandeau, ham)
- 2 tablespoons mayonnaise
Prepare
- Peel the potatoes and cut them in half. Boil the potatoes for about 15 minutes. Let them cool.
- Meanwhile, finely chop the onion, put it in a bowl, pour the vinegar over it and mix with the honey. Add salt and pepper and let the onion stand for a while.
- Cut the potatoes into small cubes. Toss them through the onion with vinegar. Finely chop the silver onions and cut the gherkins into cubes.
- Boil the frozen peas for 1 minute, drain. Rinse them cold, drain them and add them to the potatoes. Mix in the pearl onions and gherkins.
- Cut the meat into cubes and fold it into the potato mixture along with the mayonnaise. Season the salad with salt and pepper.
- Let the flavors infuse well in the fridge. Delicious with a boiled egg in slices and tomato slices.
Tip
You can also make this without meat with 2-3 diced hard-boiled eggs through the salad.
