Mmm, a delicious oven dish with white asparagus, pasta and salmon!
Ingredients

500 grams of white asparagus

100 grams of whole wheat penne (take a type with a cooking time of about 10 minutes)

1 lemon

1 small zucchini

150 grams smoked salmon

75 ml crème frache

2 tablespoons grated Parmesan cheese
Preparation
- Peel the asparagus and cut into pieces of about 3 cm. Cook the pasta together with the asparagus pieces for 10-12 minutes. Drain and reserve some of the cooking water. (If the cooking time of the penne is much longer or shorter than 10 minutes, cook the asparagus and penne separately.)
- Preheat the oven grill to the highest setting.
- Meanwhile, grate the zest of the lemon. Squeeze half of lemon. Stir the crème frache with the lemon juice and most of the lemon zest.
- Grate the zucchini or cut into strands with a spiralizer. Cut the salmon into strips.
- Fold zucchini, cream and salmon through the pasta and asparagus. Add a splash of the cooking water to make it smooth. Season with salt and pepper.
- Put everything in a baking dish and sprinkle with the grated cheese.
- Let the cheese melt under the hot grill.
