Main course for 2 persons

Ingredients:
- 300 grams sweet potatoes
- 1 onion 6 roasted peppers (from a jar)
- 10 black olives
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 teaspoon Italian spice mix
- 200 grams of fish fillet (cod, pollock, redfish, anything is possible)
- basil or parsley
Prepare
- Peel the sweet potatoes and cut them into pieces. Chop the onion.
- Cut the roasted peppers into cubes. Cut the olives into slices.
- Heat the oil in a frying pan and fry the onion in the oil until translucent. Fry the tomato paste for a while. Add the bell pepper, olives, potatoes and the Italian spice mix. Add 200 ml of water and a little salt and simmer with the lid on the pan for 15 minutes.
- Cut the fish fillet into cubes and sprinkle with pepper. Add the fish in the last 5 minutes and let it cook.
- Finely chop some basil or parsley and sprinkle this over the fish pot just before serving. Delicious with rice or pasta.
Tip
You can also very well take fish from the freezer for this. Or try a mixture of seafood (shrimp, mussels, squid rings).
