Preparation:
- Wash the salsify.
- Cut off the skin underneath.
- Add a dash of vinegar to the cooking water to prevent discoloration.
- Boil the salsify for 10 minutes.
- You can also cook salsify with its peel. It is easier to remove the skin after cooking.
- Serve with water, butter and parsley.
