3 tablespoons olive oil

1 red onion

½ red bell pepper

2 small tomatoes

2 pieces of fish fillets of 125 grams each (for example pollock, cod, haddock)

1 lemon

fresh thyme 60 ml white wine (not too sweet), or optionally 60 ml white grape juice
Preparation
- Preheat the oven to 180°C.
- Cut 2 pieces of baking paper of 20×25 cm and grease them with a little of the oil.
- Peel the onion and cut it into rings. Clean the bell pepper and cut it into cubes. Cut the tomatoes into slices.
- Spread the vegetables on the baking paper. Place a fish fillet on each piece of baking paper.
- Sprinkle the fish fillet with salt and pepper.
- Squeeze half of the lemon. Drizzle 1/2 tablespoon lemon juice over each fillet. Strip the leaves from the thyme and divide them over the fish. Divide 1 tablespoon of olive oil over each fillet.
- Close the parchment paper to make firm packets. Place the packets on a baking tray and bake for 10-15 minutes, or slightly longer if they are thick fish fillets. You can test whether the fish is cooked by opening a package. If the fish is opaque, it is cooked.
- Serve with a lemon wedge. Delicious with mashed potatoes or baked potatoes and, for example, boiled broccoli.
