Preparation
- Immerse the quinoa in 1 and a half times its volume of lightly salted water. Bring to the boil, lower the heat and cook for 10 minutes. Remove from the heat and let swell for 5 minutes. Let cool.
- Peel and slice the red onion. Cut the melon into quarters, remove the seeds then the peel, and cut the flesh into balls using a Parisian spoon (or diced). Rinse the radishes, remove the stems and rootlets, then cut them into slices. Squeeze the lemon, whip its juice with the walnut oil.
- Combine the onion, melon, radish rings and vinaigrette in a salad bowl. Add the cooled quinoa and the chopped parsley.
