150 grams of bulgur

150 ml boiling water

1 onion

2 tablespoons olive oil

3 tablespoons tomato paste

1 teaspoon (smoked) spicy paprika powder

1 teaspoon ground cumin

small bunch of coriander

small bunch of parsley

1 lemon
Preparation
Place the bulgur in a bowl and cover with boiling water. Cover and let stand for 20 minutes. Meanwhile, chop the onion, heat the oil and fry the onion on a low heat until translucent. Add the tomato puree and fry for a while. Stir in the paprika and cumin. Add a little water to make a thick sauce and let it cool. Finely chop the coriander and parsley. Squeeze half of the lemon and cut the other half into wedges. Spoon the tomato sauce with the fresh herbs through the bulgur and season with the lemon juice and salt. Serve the kisir salad with fried meat or fish, or as part of a small plate meal.
Is there a difference between bulgur and couscous?
Yes! Couscous is a type of pasta made from durum wheat flour. Bulgur is also wheat, but for bulgur whole grains of wheat are steamed, dried and then crushed. The big difference is that bulgur is whole grain. Couscous is not.
