A team of Israeli researchers has studied the benefits of a water lens. Rich in protein, it would be a great asset to regulate carbohydrate consumption.
Published in the journal Diabetes Care, the study shows that Mankai duckweed helps keep blood sugar levels low. Researchers at Ben-Gurion University of the Negev (Beer-Sheva, Israel) at the origin of this work carried out an experiment on 20 patients with abdominal overweight.
The volunteers were invited to consume milkshake-type beverages for dinner for two weeks. Both preparations contained the same carbohydrate, protein, fat and calorie content.
At the end of the experiment, participants who drank the Mankai-based milkshake showed later peaks in blood sugar and faster glucose clearance than those who drank the yogurt-based milkshake. The measurements described in this study were carried out using glucose sensors.
An asset for health and the environment
An earlier study published in the Journal of Nutrition demonstrated that a Mediterranean diet including lentil Mankai increases iron and folic acid levels, despite low amounts of red meat.
Rich in polyphenols, dietary fiber, minerals (including iron and zinc), vitamin A, vitamin B and vitamin B12, the Mankai lentil is grown in Israel as well as in Southeast Asia. It can also be grown all year round in hydroponics.
In addition to its nutritional properties, it represents a considerable advantage from an environmental point of view since its cultivation requires much less water than other legumes or protein-rich plants such as soybeans or spinach.
