Another delicious recipe from dietician Mary Stottelaar.
Ingredients
-
400 grams of red summer fruit (such as blackberries, currants and raspberries)
-
butter for greasing
-
60 grams of flour
-
60 grams of sugar
-
2 large eggs (size L)
-
180 ml Turkish or Greek yogurt
-
powdered sugar
-
1 sprig of fresh mint
-
4 small oven dishes
Preparation
Preheat the oven to 200°C. Clean the fruit and divide it among the greased oven dishes. Mix the flour with the sugar, crack the eggs on top and add the yogurt. Beat with the mixer to a light batter (it resembles pancake batter). Carefully pour the batter over the fruit and bake the clafoutis in the middle of the oven for about 25 minutes until golden brown. Check with a skewer whether the clafoutis is cooked; the skewer should come out clean from the dough. Let the claufoutis cool for a few minutes and then sprinkle some powdered sugar over it. Garnish with a sprig of mint. You can serve this dessert warm or cooled. Delicious with a scoop of ice cream or a scoop of yogurt.
