Ingredients

Wraps:

2 packs of flour tortillas (each 8 pieces of 43 grams)

1 ½ kg fresh spinach, washed or 3-4 packs (à 450 grams) frozen chopped spinach leaves, thawed

1 onion, chopped

2 tablespoons pesto
-
2 tablespoons (olive) oil

2 tablespoons pine nuts

Tomato sauce:
-
1 package sieved or pureed tomatoes

2 cloves garlic, crushed

2 tablespoons Parmesan cheese

2 tablespoons basil
-
2 tablespoons Provencal herbs

2 tablespoons coffee cream
Preparation
Tomato sauce:
Heat the tomato sauce with the remaining ingredients (except cheese and cream) in a saucepan. When the sauce is bubbling, add the coffee cream. Reduce the heat to low (don’t let it boil!) and stir in the Parmesan cheese.
Wraps:
Heat the oil and fry the onion slices. Add the spinach in batches and continue to stir-fry for 5 minutes. When the spinach has wilted, add the pesto. Stir well and turn off the fire. Toast the pine nuts in a dry pan and mix with the spinach.
In the meantime, heat the tortillas, 3 per person, according to the instructions (the remaining 4 can be frozen). Fill the warm tortillas with the spinach mixture, roll them up and pour in the tomato sauce. This dish is also delicious cold.
