Ingredients
- 250 g of Tipiak Gourmet Quinoa
- 1 orange, peeled, raw
- 1 papaya
- 50 g butter
- 1 tin of chopped pineapple (300 g)
- 2 tablespoons of brown sugar
- 150 g of dried duck breasts
- Salt and pepper
- Chocolate sauce:
- 30 g dark chocolate
- – 2 tablespoons of rum
- ½ teaspoon of cinnamon
- ½ teaspoon chilli
- 1 small onion
- 1 knob of butter
- 25 cl of liquid cream
- Salt and pepper
Preperation
- Prepare the Quinoa Gourmand as indicated on the instructions.
- Meanwhile, cut the orange into pieces.
- Core the papaya and cut it into small cubes.
- In a large skillet, melt the butter over medium heat then add the fruit (including pineapple) and sugar.
- Cook the fruit for 5 minutes, stirring occasionally.
- After cooking, add the drained Quinoa to the fruit; mix, salt, pepper.
- Sprinkle the pan with the duck breasts, serve with the chocolate sauce.
- Chocolate sauce:
- In a saucepan, melt the butter and brown the finely chopped onion.
- Once the onion is golden, deglaze with the rum and cream.
- Add the chocolate cut into pieces and stir over low heat.
- Add the spices, salt and pepper.
- Serve immediately.
- Tips:
- You can add milk to the sauce if it is not thin enough.
