Preparation
- Brush the lemon under a stream of hot water, dry it and cut it into slices.
- Peel the garlic cloves and cut them in half. Slice the bulb of the new onion, cut the tail in half.
- Rinse and dry the zucchini, cut them into long slices using a mandolin.
- Mix them with 5 cl of oil and a little salt and brown them for a few minutes in a pan.
- Divide them into two preserving jars, along with the garlic, the sprigs of marjoram, the chopped onion, the peppercorns and the lemon slices.
- Cover with the rest of the oil, close the jars and place in the refrigerator for 4 hours.
- Serve chilled, with slices of toasted bread, or grilled meat or fish.
