What is kombucha?
A thousand-year-old drink originating in China, kombucha (or combucha) is a refreshing fermented drink found in organic and natural products stores. It is composed of kombucha, a mushroom that gave the name to this famous drink, sparkling water and a little sugar. Also called Manchurian mushroom, kombucha is actually an association between bacteria (Acetobacter and Pichia) and yeasts (Saccharomyces, Zygosaccharomyces and Brettanomyces) grown in black tea. This cultivation allows the production of a juice (similar to cider) with which the drink is prepared.
What are the benefits of kombucha?
Sometimes referred to as a “living drink”, kombucha is unpasteurized, which keeps as many microorganisms alive as possible. Rich in enzymes, polyphenols, probiotics and acids (antibiotics, B vitamins, amino acids, malic, lactic, butyric acid, enzymes …);

- It boosts the immune system
- It helps detoxify the body
- It promotes digestion and rebalances the intestinal flora
- It helps to fight the stress
- It improves the condition of the skin.
However, all of its virtues have not been scientifically proven. Some also attribute miracle virtues to kombucha. But be careful, in any case it does not cure cancer or other serious diseases, as is sometimes reported.
Can you prepare the kombucha yourself?
Some people try to make their kombucha themselves by cultivating the mushroom in their homes. But when fermentation is done at home, the dangers of consuming kombucha are real. The culture liquid can indeed be contaminated by other microorganisms. Thus, infections have already been observed, sometimes fatal. It is therefore better to prefer the purchase of this drink in the trade where its manufacture is made under control, in conditions of hygiene and perfect temperature.
A drink to be consumed in moderation
Kombucha has health benefits and many micro-nutrients. But in any case, it is not a slimming drink, to sip without counting. It does indeed contain sugar. To avoid weight gain, the consumption of 1 to 3 glasses per day seems to be a maximum. Also note: pregnant or breastfeeding women, children and people with weakened immunity should refrain from drinking kombucha. A drink to be consumed in moderation therefore and not to be put in everyone’s hands!
