Like many downloadable PDF books, the PDF files you create from documents you scan are made up of photos of pages, not single letters. In order to be able to edit the content of such a document or to easily reuse parts of it, you have to run an OCR program on it. FreeOCR, a tip from Aaldert van der Vegt, is one of them. FreeOCR can convert documents directly from your scanner into editable text that you can then further clean up in, for example, Word (because there will always be errors in the recognition). You can also process pictures and PDF files in this way.
