Preparation
- Clean the leek and cut it into 3 cm sections, then cut them vertically. Clean the mushrooms, cut them in half or in quarters. Cut the whites into cubes. Heat the olive oil in a pan and brown the chicken pieces. Salt and pepper. When they are golden brown, set them aside on a plate.
- Brown the mushrooms and leek in turn in the pan for about 5 minutes. Add the ricotta, white wine and 20 cl of water. Return the chicken breasts to the pan and simmer until the ricotta is melted and the sauce thickens slightly.
