Preparation
- Soak the mushrooms for 15min in hot water.
- Meanwhile, peel the carrots and cut them into sticks. Cut the celery stalk into sections. Peel and slice the onion.
- Heat 1L of water in a saucepan. Add the vegetables, the mushrooms drained and cut into pieces with the scissors, the ginger and the soy sauce. Simmer 15min.
- Cut the chicken into cubes. Cook them separately for 10 minutes in simmering water with the stock cube.
- Drain the chicken, add it to the soup. Divide among four bowls and sprinkle with cilantro before serving.
