Preparation
- Cook the pasta al dente in salted boiling water (about 8 min). Drain and let cool. Cook the trout for 4 minutes in a court-bouillon, drain and then cut the flesh into pieces. Steam the asparagus for 8 minutes then cut them into 3 cm long sections.
- In a salad bowl, mix the pasta with 1 strip of finely chopped lemon zest, lemon juice, dill, capers, soy cream, asparagus and trout. Serve on plates.
- Bring a pot of water to a low boil with the vinegar. Crack the eggs into a small bowl one at a time and slide them gently into the water.
- Poach for 2 minutes, drain and place on each plate.
