A study led by researchers at Oakland Hospital (California) will challenge our preconceived ideas about meat consumption. While it is often said that it is better to eat white meat than Red meat, it seems that both would have the same effects on the cholesterol in the blood.
Poultry as bad for cholesterol as red meat
For this study, the researchers recruited healthy men and women, aged 21 to 65, with a BMI between 20 and 35 kg / m2. Each of them was assigned to a diet randomly: red meat, white meat and protein diets without meat that they followed for 4 weeks.
“When we planned this study, we expected that red meat would have a more negative effect on the cholesterol blood than white meat, but we were surprised it wasn’t. Their effects on cholesterol are identical when the levels saturated fat are equivalent “explains Prof. Ronald Krauss, director of atherosclerosis research and lead author of this study published in the Journal of clinical nutrition.
The results are therefore in line with the recommendations recommending diets comprising a high proportion of fruits and vegetables.
