Whoever says “summer recipes” obviously says “gazpacho”. This cold soup from Andalusia, in the south of Spain, is undoubtedly one of the simplest summer dishes to prepare. Just take a short trip to the market and select the summer vegetables you prefer and, voila, you’re done!
To prepare the Andalusian gazpacho recipe : Immerse 6 tomatoes for 30 seconds in boiling water then peel and seed them. Put in the bowl of a blender with 1 red pepper seeded and cut into pieces, 1 clove of garlic peeled and cut into pieces, 1 c. at s. olive oil, 1 tbsp. at s. sherry vinegar, a few drops of Tabasco, a little salt and pepper. Blend until smooth and serve chilled. You can also bring a little Italian touch to this recipe by choosing a balsamic vinegar rather than a sherry vinegar and replacing the feta with mozzarella di Buffala. Vegetables can also cause food poisoning
As for the gazpacho, it is also at your greengrocer that you will find something to prepare most of the fresh recipes presented in this slideshow. But be careful to clean your vegetables (and your fruits, of course) to avoid food poisoning. Because if we often think of meat and raw fish as sources of contamination, in summer, vegetables are the cause of almost half of the cases of food poisoning. A little reminder of the good gestures:
- Wash your hands thoroughly with soap and water before handling fruits and vegetables, and always rinse them under clear water before eating them.
- In the fridge, keep fruits and vegetables away from raw (uncooked) meat. Do the same when you carry them in your basket when you return from the market.
- If you picnic outside, fruit and vegetables must be stored at a maximum temperature of 4°C, i.e. in a cooler placed in the shade.
