The classic tiramisu recipe
Ingredients for 8 people
- 3 large eggs
- 100g sugar
- 250g mascarpone
- 24 spoon cookies
- 50 cl unsweetened black coffee
- 30g bitter cocoa
Recipe
- Separate the egg whites from the yolks. Whisk the yolks with the sugar. Add the mascarpone while whisking. Beat the egg whites, then gently fold them into the mixture with a spatula.
- Quickly dip the cookies in the coffee and line the bottom of a rectangular dish.
- Cover with a layer of mascarpone cream, add a layer of biscuits and a layer of cream. Sprinkle with cocoa using a fine sieve and place in the refrigerator for at least 3 hours.
Tiramisu light version
Replace the mascarpone with 4 well-drained 0% Swiss rolls. And sugar by as much honey.

Gluten-free tiramisu
Make your own gluten-free lady finger cookies.
- Whisk 3 egg yolks with 50 g of sugar. Whip 3 egg whites with 40 g of sugar.
- Mix everything together, incorporating 60 g of cornflour.
- Form cookies with a 1.5 cm pastry bag, on a baking sheet covered with parchment paper.
- Bake for 15 to 20 minutes in the oven. 5 (150°C).
Lactose free tiramisu
- Melt 100 g ofcoconut oillet cool.
- Add 100 g of sugar then 250 g of tofu silky (not too cold) beating well. Incorporate 2 egg yolks and 2 beaten egg whites.
- Use this mixture instead of the mascarpone cream, then chill for 12 hours.
Tiramisu without eggs
Whisk the mascarpone with the sugar and replace the 3 eggs per 15 cl of whipped whipping cream into a firm foam.
Fiber-enriched tiramisu
- Add berries to each layer of cookies: Cassis, blueberriesstrawberries cut into pieces, raspberries…
- Replace it Coffee with a fruity infusion. And the biscuits with the spoon by biscuits enriched in fibers (at the hiscereals, etc.).
