Preparation
- Keep only the white part of your leeks and cut it into slices.
- Brown the leeks in a non-stick pan over low heat in butter for about 20 minutes.
- Once the leeks are tender, add the crème fraîche and mustard then stir with a wooden spoon. Book.
- Fill a saucepan with 50cl of water and 50cl of milk and place your haddock steaks.
Bring to a boil then let stand off the heat and cover for 10 minutes. - Meanwhile, butter a pancake pan and brown your galette over low heat.
- Garnish with your leek fondue and a few slices of the poached white haddock.Close your galette and serve everything quickly!
