A delicious, well-filled vega(n) tortilla with the taste of pulled pork. You can with jackfruit!
Ingredients

1 can jackfruit (drained weight about 280 grams)

2 tablespoons sweet soy sauce

1 lime

1 tablespoon honey

1 tablespoon tomato paste

1 teaspoon mustard
-
½ teaspoon smoked paprika powder

1 tablespoon olive oil
-
1 clove of garlic
-
2 tomatoes
-
¼ cucumber
-
1 avocado
-
2 whole wheat wrap tortillas

150 grams white cabbage salad (or plain chopped cabbage is also possible)

40 grams of grated cheese
Preparation
- Preheat the oven to 180 degrees Celsius. Drain the jackfruit. Pull the flesh apart into flakes with your hands.
- Squeeze half of the lime. Make a marinade of soy sauce, lime juice, honey, tomato paste, mustard, paprika and olive oil. Squeeze the garlic on top.
- Spoon this marinade through the jackfruit. Line an oven dish with baking paper and divide the jackfruit on it. Place the jackfruit in the oven for 25 minutes.
- Meanwhile, cut the tomatoes, cucumber and avocado into cubes and bake the wrap tortilla yourself (or warm up ready-made wraps).
- Divide the coleslaw over the tortillas, spoon the pulled jackfruit on top and finish with diced tomato, cucumber and avocado.
- Sprinkle with some grated cheese and garnish with lime wedges.
Tips:
- Top up with sour cream and guacamole if needed.
- Delicious with fresh coriander.
