A salad on the table with figs, bacon and walnuts within 15 minutes.
Ingredients
-
4 slices of thick bacon or bacon
-
1 head butter lettuce or other neutral lettuce
-
3 tablespoons olive oil
-
1 tablespoon vinegar
-
pinch of coarse mustard
-
pinch of honey
-
8 fresh figs
-
4 tablespoons walnuts
-
50 grams of spicy blue-vein cheese (for example Roquefort)
Preparation
- Gently fry the bacon slices until they are nicely crispy.
- Place the bacon on a paper towel to dab off the fat.
- Wash the lettuce and remove the veins.
- Let the lettuce drain in a colander. It is best to dry the lettuce in a salad spinner.
- In a bowl, whisk together a vinaigrette of olive oil, vinegar, honey, mustard and pepper. Start with a generous amount of oil, then add the vinegar, honey and mustard.
- Cut the figs in half lengthwise.
- Briefly fry the figs in a dry pan, cut side down, until they are nicely browned. The figs are now caramelized.
- Mix the vinaigrette with the lettuce.
- Place the bacon on the lettuce and figs.
- Sprinkle the lettuce with the walnuts and the crumbled cheese.
