Making your own sourdough bread is fun. You do need some time for it. So it’s not surprising that with all that sitting at home lately, more and more people have started baking sourdough bread themselves. To bake your own sourdough bread, you need a sourdough starter. You can make your own or see if you can get a starter from someone.

100 g sourdough starter

525 g wholemeal flour

9 grams of salt

Preparation
Day 1: Make a dough
Add 75 ml lukewarm water to the sourdough starter and stir. Add 75 grams of the whole wheat flour and stir to a batter/dough. Let it stand at room temperature for 4 hours.
Make the dough part 1:
Dissolve the predough in 300 ml lukewarm water. Add the remaining 450 grams of flour. Stir well and let it stand at room temperature for 30-60 minutes.
Make the dough part 2:
Dissolve the salt in a little warm water. Add this to the dough and knead it with your hands. The dough is very wet. Knead well for 10 minutes and you will notice that the dough absorbs more and more moisture and becomes more flexible and does not stick anymore. You can also do the kneading through a food processor. Place the dough in a floured bowl, cover with a damp tea towel, and let rise at room temperature for 3 hours.
Make the dough part 3:
Dust the work surface with some flour and place the dough on it. Press it flat and fold it in on all sides. Turn the dough over so that the folds are underneath and press the sides against the dough so that you get a convex shape. Place the dough in a dough basket or bowl sprinkled with some flour. Place the dough in the fridge covered with a tea towel. Leave there for at least 12 hours.
Day 2:
Finishing dough part 1:
Remove the dough from the refrigerator and let it sit at room temperature for 1 hour. Set the oven to 250°C and place an ovenproof casserole (type Creuset) in the oven for 1 hour.
Baking bread:
Remove the hot pan from the oven and set the oven to 210°C. Sprinkle the dough with some flour and place it seam side down in the warm pan. Cut open the top of the bread with a sharp knife. Sprinkle the bread with some water (can also be used with a plant sprayer). Put the lid on the pan and place the pan in the center of the oven. Bake for 25 minutes with the lid on the pan. Remove the lid and bake the bread for another 25 minutes. During the last few minutes, make sure that the bread does not get too dark. Let the bread cool.
