Making traditional sauerkraut yourself is delicious, but you have to have time for it. The process of making sauerkraut takes at least 6 weeks. Don’t have that time and don’t want sauerkraut from a bag? Then this recipe is recommended. This sauerkraut differs from traditional sauerkraut because it does not contain healthy bacteria, which are created during the fermentation process of traditional sauerkraut. But on the other hand, there is little salt in this sauerkraut.
Ingredients

1 small pointed cabbage (about 1 kilo)

200 ml vinegar

200 ml white wine

10 juniper berries

3 bay leaves

6 cloves

1 onion

1 apple (preferably Goudreinet)
Preparation
- Halve the cabbage and cut out the hard core. Cut the cabbage into very fine strips (can also be done with a food processor).
- Put the cabbage together with vinegar, wine and 200 ml water in a pan. Add the juniper berries, bay leaves, cloves and a pinch of salt and bring to a boil.
- Meanwhile, peel the onion. Halve the onion and cut into thin rings. Add the onion to the boiling cabbage. Boil it together for about 15 minutes.
- Peel the apple and remove the core. Cut the apple into small pieces. Cook the apple with the sauerkraut for the last 5 minutes.
- Remove the juniper berries, bay leaves and cloves. Delicious with mashed potatoes and a fried pork chop.
