Ingredients
• 1 onion
• 1 clove of garlic
• Olive oil
• 500 grams of beef tartar (or grind beef steaks yourself in the food processor)
• Pinch of ground cumin
• Pinch of paprika powder
• 1/2 tablespoon mustard
• Few drops of Worcestershire sauce
• 1 egg
• 2 slices of bread without crust
Preparation
• Peel and chop the onion and garlic and fry them gently for a few minutes in some olive oil. The pieces do not need to be browned.
• Stir the onion and garlic through the meat. Then add spices: cumin, some pepper, a little salt, paprika, mustard and the Worcestershire sauce.
• Break the egg above the meat and mix everything together.
• Crumble the bread in the food processor and fold half of these breadcrumbs through the meat (you may need a little less or a little more, check how firm the meat becomes).
• Sprinkle some of the breadcrumbs over a piece of kitchen paper. Shape the meat into four flat discs and place them on the breadcrumbs. Sprinkle the rest of the breadcrumbs on top. Press down on the burgers. Place the burgers in the refrigerator until ready to use.
• Fry the burgers for 8 to 10 minutes in a frying pan or grill pan in a little olive oil. Turn them over every now and then.
• Serve them on a brown bun with a lettuce leaf, some tomato ketchup and gherkin slices.
