British researchers have just discovered unsuspected health benefits of this cheese, virtues which would be one of the secrets of longevity for French women (who live on average 84 years and 8 months).
The British called it the “French paradox”: consuming blue cheese (yet rich in lipids) would not be bad for the heart but, on the contrary, thanks to its anti-inflammatory properties, Roquefort would be good for your health!

According to researchers at Cambridge-based Lycotec, regular (but moderate!) Consumption of red wine alone cannot explain why we live longer than many of our European neighbors. These researchers therefore wondered if “Roquefort would not be the missing piece of the puzzle of what we call the French paradox”. The explanation would come from the fact that once immersed in an acidic environment (therefore in our stomach), this cheese made from sheep’s milk would develop anti-inflammatory properties, thus reducing the pain of osteoarthritis and attenuating the attacks of age.
