Preparation
- Bring a large pot of salted water to a boil, immerse the sweetbreads in it for 5 minutes. Drain, run them under cold water, then remove the white membrane and the ribs.
- Rinse and gently dry the mushrooms. Remove the tips of their feet and cut them into 4 or 6 depending on their size. Chop the sage.
- Heat half the oil in a pan and brown the sweetbreads for 5 minutes on all sides so that they are golden brown. Remove from the pan, pour in the rest of the oil, add the mushrooms and sage. Sauté for a few minutes until the mushrooms have given up their water. Add the liquid cream and cook for another 5 min. Add salt and pepper.
- Cook linguine al dente, according to package directions.
- Cut the sweetbreads into slices, place them in the pan and mix with the cream mushrooms. Serve the linguine, pouring over the cream and the sweetbreads.
