Also delicious with pecan or walnuts!
Ingredients

1 sweet potato (150 grams)

60 grams oatmeal flour

1 egg

150 milliliters of milk

1 teaspoon cinnamon

1 teaspoon baking powder

almonds (or other nuts)
Preparation
- Peel the potato and cut it into cubes.
- Cook for about 10 minutes, until soft, then blend the potato in the food processor with the egg and milk.
- Add the oatmeal flour, baking powder and cinnamon and mix until smooth.
- Heat a little olive oil in a frying pan and fry the pancakes for about 2 minutes per side.
- Garnish them with almonds.
This recipe makes about six pancakes.
