Preparation
- Pour the semolina into a bowl and sprinkle it with its volume of salted boiling water. Let swell for 5 minutes then fluff with a fork. Leave to cool for 30 minutes in the refrigerator.
- Cut the peppers into thin quarters. Take strips of lemon zest and boil them for 30 seconds. Drain and cut into thin strips.
- Sprinkle the semolina with the lemon juice and olive oil, pepper and mix. Add the peppers, the green onion, cut into thin sections, and the parsley leaves.
