Preparation
- Coat the salmon fillets with red curry paste. Put in the refrigerator for an hour.
- Prepare the salsa: in a bowl, combine the diced cucumber, chopped peppers, cilantro, lemon juice and spring roll sauce.
- Cook the vermicelli in salted boiling water. Drain, mix with half of the salsa. Preheat the plancha. Thread the salmon steaks on peaks and sear them for 2 to 3 minutes on the skin side. Turn over, cook for another 2min.
- Serve with the vermicelli, sprinkle with cashews and sesame and present the rest of the salsa separately.
