When you cut a red cabbage, you really see how beautiful it is. All those leaves overlapping each other. That deep red color. This roasted cabbage has it all. Anyone can make this super easy recipe. The spicy-sweet pear provides a rich taste sensation and is something different than those eternal apples with the red cabbage.
Ingredients
-
1/2 red cabbage
-
3 tbsp walnut oil
-
2 tbsp garlic powder
-
2 ripe pears
-
1 tsp cayenne pepper
-
1/2 tsp baharat (Middle Eastern spice mix)
-
1/2 lime
-
50 g fresh goat cheese
-
50 g salad mix of your choice
Preparation
1 Cut the cabbage lengthwise into 3 cm thick slices.
2 Whisk together the oil, garlic powder and some salt and pepper to make a marinade. Drizzle this over the cabbage slices and let it rest for 15 minutes.
3 Meanwhile, preheat your oven to 180˚C. Peel the pears and cut them into 1 cm thick slices. Sprinkle the pear with the cayenne pepper and baharat.
4 Place the marinated cabbage on a baking tray lined with baking paper. Place the pear slices on top. Place the baking sheet in the preheated oven for 10-15 minutes, until the cabbage turns light brown.
5 Drizzle the lime juice over the cabbage and pear. Crumble the goat cheese on top and serve with the lettuce.
