Preperation
Ingredients for 4 persons :
Drain the cherries or defrost them.
Melt the butter in a saucepan, then put the cherries in it, stir and cook for 5 minutes, then add the kirsch and leave to cool.
Separate the egg whites from the yolks.
Vigorously beat the egg yolks with the sugar until they turn white, stir in the mascarpone and cherry syrup.
Gently fold in the whipped egg whites.
Arrange in a glass or a dish with the cherries at the bottom, then slices of madeleines on the edges, then the mascarpone preparation on top, refrigerate for several hours, ideally 12 to 24 hours.
Serve with a few cherries on top and a dash of cherry syrup.
Tips
You can also use sour cherries or bigarreaux.
