Preparation
- Cut the leg into cubes, remove the visible fat and chop in a blender with the sundried tomatoes.
- Toss with the ground beef, thyme, salt and pepper.
- Shape into balls the size of large walnuts.
- Heat the oil in a pan and cook the meatballs for about ten minutes, turning them, until golden brown.
To stay light, the meatballs should be made with pieces of lean meat: 5% beef, fatless leg. Ask your butcher to choose suitable cuts.
These fragrant balls are delicious with a tomato coulis.
