2 tablespoons olive oil

1 red pepper, deseeded and finely chopped

2 onions, finely chopped

2 garlic cloves, crushed

2 red bell peppers, cut into small cubes

1 liter vegetable stock

1 can (of 400 grams) diced tomatoes

Freshly ground black pepper

150 grams (uncooked) rice

200 grams of peanut butter
Preparation
Heat the oil in a frying pan and fry the pepper, onion and garlic over a low heat. Add the diced bell pepper and let it simmer on low heat for 8 minutes, stirring. Add the stock, diced tomatoes, pepper and 1 liter of water. Heat the soup over low heat, uncovered, 45 minutes. Stir the soup occasionally.
Add the rice and let it simmer for 20 minutes, stirring occasionally. Mix the peanut butter into the soup and let the soup simmer for another 10 minutes, stirring. Add some extra stock if needed to bring the soup to the desired thickness.
