Preparation
- Cut the eggplant into small cubes. Melt them for 10 to 12 minutes in a pan, in olive oil. Salt and pepper.
- Cut the artichokes into quarters and the ham slices into strips, add them to the pan. Cook the pasta al dente (about 8 min) in salted boiling water.
- Drain, put them in the sauté pan. Sprinkle with Parmesan and serve with young shoots or dandelion.
