Preperation
Soften the gelatin sheet in a bowl of cold water. Drain it and boil it with 3 cl of water. Separate the white from the egg yolk. Beat the egg yolk, mascarpone, fromage blanc and 2 tablespoons of Pure Via. Add the water to the gelatin and mix. Whip the egg whites until stiff. Gently fold the egg whites into the mascarpone mixture.
Pour the remaining Pure Via and the Amaretto * into the coffee and mix. Cut the cookies in 2, soak them in the mixture and line the bottom of 6 verrines. Pour a layer of mascarpone mousse on top, then again, cookies soaked in coffee. Finish with a layer of mascarpone mousse. Refrigerate the verrines for at least 4 hours. Sprinkle with cocoa just before tasting them.
