Preparation
- The day before, put the small spelled to soak in a salad bowl.
- Mince the carrots, onions, celery and leek. Cut the ham heel into “bacon”. Put all this in a large Dutch oven and brown with olive oil.
- Add the drained spelled, bay leaf, a little salt (be careful, salt carefully, taking into account the presence of raw ham) and water. Bring to a boil and cook for about 1.5 hours on low heat. Mix from time to time so that the bottom does not stick, and add a little water towards the end if necessary.
- Off the heat, add the Parmesan and pepper, then mix well and serve immediately.
