Native to North America, this small red berry with a slightly harsh taste had already won its letters of nobility with the Indians. In addition to using it as war paint, they knew him virtues against various pains, injuries and gastric embarrassments. Their observations are now confirmed by an impressive number of scientific studies. Studies are unanimous: its richness in antioxidants makes it an official health partner.
Protector of mucous membranes
Like all antioxidants, those in cranberry protect our cells from attack by free radicals. They thus help to slow down aging or prevent certain pathologies (rheumatic and cardiovascular diseases, diabetes, cancer). However, these anti-oxidants have one more “trick”: they protect the mucous membranes by preventing pathogenic bacteria from adhering to them. Studies have shown that cranberries limit the appearance of dental plaque, and therefore the risk of periodontosis (gum disease). They strengthen the gastric mucosa by making it less prone to ulcers of bacterial origin and other lesions that can generate cancer. Finally, they cleanse the urinary tract and the bladder, thus preventing cystitis, even those that are resistant to antibiotics.
Fresh, dry or in juice?
The ideal dose has been estimated at a glass of 30 cl of juice per day or the equivalent in the form of fruit. Good thing, it can be cooked in a lot of ways. And with its 46 Cal per 100 g, you should not do without!
From mid-October to mid-January, some supermarkets offer cranberries in transparent trays or in perforated bags in the fruit and vegetable department. They can be kept for one month in the vegetable drawer or one year in the freezer. You’ll find them in the form of a sauce, traditionally served with Thanksgiving turkey, but which also accompanies pancakes, ice cream and yogurt. They are eaten dried like raisins, and in the form of drinks.
Taste the juice after having reduced it by half over low heat, our chef still advises. Once its aromas are concentrated, it can be cooked with shellfish, raw fish, meats or desserts. A delight !
