Something different than a pancake with syrup for once.
Ingredients

100 grams oat flour

100 grams of cooked beetroot

80 milliliters (almond) milk

1 egg

1 teaspoon baking powder

pepper and salt

arugula
-
goat cheese
Preparation
- Grind the beetroot into a puree with the food processor and add the egg, milk and oatmeal flour.
- Mix everything into a smooth batter.
- Season this with salt and pepper.
- Heat a little oil or butter in a pan and fry the pancakes until the top is dry.
- Flip them over and cook the other side as well until fully cooked.
- Spread with goat cheese and arugula and roll up.
- Garnish with some arugula.
This recipe makes about six pancakes.
