
Do you often throw away overripe bananas? Don’t do it anymore. You can make all kinds of goodies with it. Banana bread for example. Delicious for breakfast, but also a great snack.

4-5 ripe bananas (450 grams of flesh)

50 ml oil

50 grams of honey

2 eggs

1 teaspoon cinnamon

250 grams self-raising flour

100 grams of wholemeal flour

75 grams of walnuts
Preparation
- Brush the mold lightly with oil. Preheat the oven to 180°C.
- Peel the bananas and puree the flesh with a stick blender or in a food processor.
- Beat in the oil, honey, eggs and 50 ml water.
- Mix the cinnamon into the flour. Mix this with the banana puree.
- Roughly chop the walnuts and fold them into the dough.
- Transfer the mass into the mould.
- Bake the bread in the moderately hot oven for 1 hour until cooked and brown.
- Let the bread rest in the mold for 15 minutes. Turn the bread onto a rack and let it cool.
- Cut the bread into about 12 slices. Pack it in portions in freezer bags and freeze it.
