Spicy lentil tomato soup

Ingredients

200 grams of red lentils

1 tbsp olive oil

1 large onion, chopped

2 cloves garlic, finely chopped

1 stalk celery, diced

200 grams canned tomatoes, drained

1 red pepper, finely chopped

1/2 tsp paprika powder

1/2 tsp ground cumin

6 dl vegetable stock

1/2 green bell pepper, finely chopped

Preparation
- Place the lentils in a bowl of water. Heat the oil in a large pan and fry the onion, garlic and celery over low heat.
- Drain the lentils and add them to the pan with the tomatoes. Be careful not to burn the lentils.
- Add the red pepper, paprika, cumin, stock and green pepper and season with salt and pepper.
- Cook the lentils, covered, over low heat for 30 to 40 minutes. Add a little more water if the soup becomes too thick.
- Serve the soup in warm soup bowls and garnish with some chopped coriander.
