From the end of winter to the beginning of spring, green vegetables are the ones that we find the most on the stalls: broccoli, leekspinach, peas, cabbage (white, curly, from Brussels…), cress, chicoryasparagus, etc.
Allthese green vegetables are healthy and low in calories. Their consumption makes it possible to prevent certain cancers, the diabetes and cardiovascular disorders. They offer to multiple nutritional benefits. They are rich in fiber which protect the digestive tract and facilitate intestinal transit. They are also source of vitamins (AT, VS, K, B6, B9)of minerals (magnesium, iron, calcium) andantioxidants. Green vegetables are therefore important for maintaining good health. Also, with a little imagination, soups can be the way to get kids to eat greens.
5 Tips for getting kids to eat vegetable soup:
- Make the child choose the vegetable. If he decides for himself, he will be more confident to eat it.
- Invite him to the preparation soup. Optionally, explain the benefits of the soup and the vegetable.
- Prioritize the taste. If the vegetable chosen has a strong taste, add potatoes to soften its aroma or melted cheese such as Kiri or Laughing Cow. The child will be all the more happy to prepare the little cheeses to dip into the soup. You can also rely on seasoning (spices, aromatic herbs) to divert the taste of the vegetable.
- Add accompaniments with the soup such as croutons, pasta in the shape of letters, crackers or any other ingredient that the child might like to dip in his soup.
- Play with presentation. Use a bowl that the child likes to put the soup in. With a little milk or cream, draw a man, a heart or a shape that will delight him and make his mouth water!
