Leek broth with ginger

Recipe
- Peel 1 kg of leeks and clean them thoroughly. Cut them in half lengthwise and tie them with kitchen wire.
- Put the leeks in a casserole dish and add 1.5 l of water.
- Season with salt and pepper and add 1 to 2 teaspoons of ground ginger.
- Bring to the boil and cook for 45 minutes.
- Remove the leeks and enjoy this broth hot or lukewarm.
Fennel, carrot and ginger velouté
Fennelstimulates digestion and relieves small digestive disorders in the aftermath of agape.
The carrot reduces bad cholesterol.
Ginger, also stimulates digestion and relieves possible nausea.
Recipe
- Chop two fennel bulbs and peel 4 carrots.
- Peel and grate 2 cm of fresh ginger.
- Pour 75 cl of chicken stock in a casserole dish, add the fennel, diced carrots and ginger.
- Bring to the boil then lower the heat and cook for 30 minutes.
- Pour into a bowl and sprinkle with chopped cilantro if necessary.
