Recipe
- Peel 1 kg of leeks and clean them carefully. Cut them in half lengthwise and tie them with kitchen twine.
- Put the leeks in a casserole dish and add 1.5 liters of water.
- Salt, pepper and add 1 to 2 teaspoons of ground ginger.
- Bring to the boil and simmer for 45 mins.
- Remove the leeks and enjoy this hot or warm broth.
Fennel, carrot and ginger velouté

Carrots reduce bad cholesterol.
Ginger, also stimulates digestion and relieves possible nausea.
Recipe
- Slice two fennel bulbs and peel 4 carrots.
- Peel and grate 2 cm of fresh ginger.
- Pour 75 cl of chicken broth into a casserole dish, add the fennel, diced carrots and ginger.
- Bring to the boil then lower the heat and simmer for 30 minutes.
- Pour into a bowl and sprinkle with chopped coriander if desired.
