The basic chocolate mousse recipe
Ingredients
- 3 eggs
- 100 g baking chocolate
Recipe
- Melt the chocolate in a bain marie. Remove from heat as soon as it is melted, let cool.
- Crack the eggs, separating the whites from the yolks.
- Add the yolks to the warm chocolate, then beat the whites until stiff with an electric mixer. Gently add them to the mixture using a spatula, working the preparation from the bottom up so as not to crush the whites.
- Divide into ramekins and chill for at least 3 hours.

Chocolate mousse with super-low glycemic index
Melt 100 g of 99% cocoa chocolate with 50 g of coconut cream. Off the heat, add 3 egg yolks, then the 3 beaten egg whites.
Chocolate mousse without eggs
Pour 200 g of silken tofu (in organic stores) into a salad bowl. Add the cooled melted chocolate. Mix quickly then whisk to homogenize the preparation. Pour into ramekins and let sit overnight.
Vegan chocolate mousse
Replace the eggs with aquafaba (the juice from soaking jarred chickpeas). Whip 120 g of cold chickpea juice and stir in 150 g of melted chocolate.
Slimming chocolate mousse
Remove egg yolks. A serving of mousse then peaks at just 148 calories, barely more than a whole milk fruit yoghurt.
