Do you love risotto and green asparagus? Then this is your dish! Delicious in taste, healthy and easy to make too.
Ingredients

1 onion

300 grams of green asparagus

250 grams of mushrooms

3 tablespoons sunflower oil

250 grams of risotto rice

600 ml beef stock

300 grams gammon (piece)

2 tablespoons butter

a few sprigs of chives
Preparation
- Peel and chop the onion. Wash the asparagus and cut them into pieces. Clean the mushrooms and cut them into slices.
- Heat the oil in a frying pan. Saute the onion until translucent. Add the asparagus and mushrooms and fry gently for 3 minutes. Remove everything from the pan and keep.
- Add the rice to the remaining fat and fry for about 1 minute.
- Add part of the stock and bring to a boil over low heat. Stir occasionally. Add new stock when most of the stock has been absorbed.
- After about 15 minutes, add the vegetable mixture to the rice and let it heat up.
- Heat the rice for a few more minutes when all the stock has been absorbed.
- Meanwhile, cut the ham into strips. Stir the ham and butter through the risotto. Season with pepper.
- Chop the chives and sprinkle them over the risotto.
