
These whole grain banana pancakes are tasty, healthy and ideal for breakfast, lunch or snack! Top the pancakes with some fresh fruit or just eat them as they are.
Ingredients

50 grams of oatmeal

125 ml milk

1 egg

1 teaspoon cinnamon

1 pinch of salt

1 teaspoon baking powder

1 banana
-
1-2 tablespoons oil or butter

2 tablespoons student oats
-
2 spoons of Greek yogurt

Honey (optional)
Preparation
- Grind the oats fine in a food processor or with a stick blender. Beat the milk and egg into the oatmeal. Add cinnamon, salt and baking powder and beat until smooth. Add a splash of milk or water if the batter is too thick.
- Halve the banana lengthwise, and cut the halves into 3 pieces. Heat a little butter in a frying pan and fry the banana pieces for a few minutes until they start to brown.
- Remove half of the banana pieces from the pan. Slide the rest apart and spoon some batter on each piece. This will give you 3 small pancakes. Bake the pancakes on one side for a few minutes. Turn them and brown them on the other side.
- Meanwhile, chop the student oats.
- When the 3 pancakes are ready, bake 3 more pancakes in the same way.
- Serve the pancakes per 3 pieces on a plate with a scoop of Greek yogurt and the finely chopped student oats. Drizzle with a little honey if desired.
Tip: you can also add fresh fruit, such as blueberries, strawberries or raspberries.
