Pesto with basil is the best known, but did you know that you can also vary very well with ‘other greens’? Like arugula or coriander for example.

Ingredients arugula pesto
- 50 grams of pine nuts
- 2 cloves of garlic
- 50 grams Parmesan cheese
- 50 grams arugula
- 125 ml olive oil
Prepare
Toast the pine nuts in a dry frying pan until golden brown. Then put them together with the peeled garlic, Parmesan cheese and a pinch of salt in a food processor. Add the arugula. Run the food processor until the leaves are finely chopped. Now add the olive oil and let the mixture turn until you have a coarse sauce.
Ingredients coriander pesto
- 55 grams of almond shavings
- 1 lime
- 45 grams coriander
- 100 ml olive oil
- 75 grams of feta
Prepare
Toast the almond slivers in a dry frying pan until golden brown. Grate the zest of the lime and squeeze the fruit. Puree the coriander with the slivered almonds, olive oil, feta and 2 tablespoons of the lime juice, the lime zest and 5 tablespoons of water in a food processor or with an immersion blender until you have a smooth pesto. Add some water if the pesto is too thick. Season with salt and pepper.
